Caramel Sugar

Caramel is golden to dark-brown thick sugar syrup made by heating any of a variety of sugars. The Caramel Sugar recipe here is used for flavour in puddings and desserts.as a filling in sweets and as a topping or sauce for ice cream, custard and coffee. The process of caramelisation consists of heating sugar slowly to around 170 °C (340 °F). As the sugar heats, the molecules break down and re-form into compounds with a characteristic color and flavor giving you a rich golden sugar syrup perfect as a sauce for a sweet tooth like you.

Recipe
(4 parts Sugar : 1 part Water)
200 gm Sugar
50 ml Water
Method
1) Add sugar into a heavy bottomed pot.
2) Pour the water evenly on the sugar.
3) Bring the sugar and water to a boil.
4) Do not stir the content as it will cause the sugar to crystalise.
5) Once the sugar syrup starts to turn golden in colour, Swich off the fire and let the rest of the sugar caramelise on its own heat. 
6) It is now ready to be used as a sauce, decorations or simply as sweets.
